About Noma (restaurant), Copenhagen, Denmark:
In Copenhagen, Denmark run by the chef Rene Redzepi Noma is a two Michelin star restaurant. From the two Danish words ‘nordisk’ (Nordic) and ‘mad’ (food) the name of Noma portmanteau. In 2003 this restaurant was opened and now well known for its reinvention and for the interpretation of the Nordic Cuisine. By the Restaurant magazine as the Best restaurant in the world it has been ranked for the year of 2010, 2011, 2012 and 2014.
Location and History of Noma:
In the Christianshavn neighborhood of the central Copenhagen on the waterfront in an old type warehouse the restaurant is located. By the Greenlandic Trading Square is situated the building, for the 200 years this Square was a center for the trade to and from the Finnmark, Faroe Islands, in particularly the Greenland and Iceland also. Among the good there are salted fish, whale skins and oil, and Dry fish. Before being sold off to the European markets in and around the warehouse that were stored.
Into North Atlantic House the warehouse was turned in 2003, for the North Atlantic region a center for the art and culture. By Redzepi and Claus Meyer at the same time Noma was opened. By the Space Copenhagen is designed the restaurants interior.
Foods of Noma:
Nordic or Scandinavian cuisine found in the Noma, to redefine the Nordic cuisine the restaurant’s founders Claus Meyer and Rene Redzepi have attempted. According to Meyer in the book of Noma – Nordic Cuisine, more than an interpretation of the Nordic food, it’s classical more than the Nordic food itself and as the cuisine of Noma can be considered. “The Hen and the Egg” is the Noma’s famous dish.
Staff of Noma:
Like as The elBulli, Le Jardin des Sens, Kong Hans Kaelder and the French Laundry at the restaurant owner and founder Rene Redzepi has worked formerly. Matt Orlando is the chef for the cuisine, while working at The Fat Duck who met with Redzepi, and Norwegian Mads Kleppe is the Sommelier.
Hosted by Claridge’s in Mayfair for a 10 day pop-up restaurant Noma decamped to the London in 2012 from 28 July to 6 August. At that time in Copenhagen the restaurant was closed from 22 July to 13 August for the refurbishment and restoration. A £195 per person nine course menu which included the versions of clotted cream and scones and with British ingredients the Lancashire hotpot, as well as flown to London the live ants forged in Denmark, along with the head chef matt Orlando and from the restaurants the staffs Redzepi served up.
For two months in the beginning of 2015 the restaurant would be relocating to Japan, the Noma was announced that on 29 March 2014.
